A natural-processed peaberry from Rwanda's Huye Mountain in the Southern Province — red berry, orange candy, and a wine-like grape-juice finish. Peaberry is the round single-bean mutation that occurs in roughly 5 % of each harvest; it's dense and uniform, and it holds up to longer drying better than a standard flat bean.
Huye sits at altitude in volcanic soil close to the Burundian border. Rwandan coffees at this elevation have a distinctive acidity — often wine-like, sometimes compared to Burgundy — and the natural process amplifies the fruit without pushing into heavy fermentation. The peaberry selection concentrates flavour into smaller beans.
We roast this very light. Short development preserves the wine-like fruit and brings the unexpected orange-candy sweetness forward.
